Method
 

  1. Prepare the pineapple by peeling and slicing it into rings or chunks.
  2. In a large pot, combine sugar, apple cider vinegar, crushed red pepper flakes, cinnamon, ginger, and salt.
  3. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.
  4. Add the pineapple slices to the pot and simmer for about 10-15 minutes until the pineapple is tender.
  5. Remove the pot from heat and let it cool slightly.
  6. Transfer the pineapple and syrup into sterilized jars and seal them tightly.
  7. Allow the jars to cool completely before storing them in the refrigerator.
