  • 680 g boneless skinless chicken breast or thighs, cubed
  • 2 cups pineapple chunks, fresh or canned in juice
  • 60 ml soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Method
 

  1. Heat oil in a skillet over medium heat and lightly brown the chicken.
  2. Stir together soy sauce, brown sugar, garlic, cornstarch, and a splash of water, then add to the skillet.
  3. Add pineapple chunks and simmer until chicken is cooked and sauce thickens. Serve warm.

Notes

For an extra kick, add a pinch of red pepper flakes. Serve with steamed rice or noodles for a complete meal.
