  • 680 g boneless skinless chicken breast, cut into 1 1/2-inch cubes
  • 720 g pineapple chunks
Marinade
  • 60 ml low-sodium soy sauce
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 1 tbsp lime juice
  • 0.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp chopped chives or green onion, for garnish
  • 8 to 10 skewers soaked if wooden

Method
 

  1. Make the marinade: In a bowl, whisk soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and pepper.
  2. Marinate: Add chicken cubes, toss to coat, cover, and chill 30 minutes (up to 4 hours).
  3. Preheat grill: Heat to medium-high and oil grates (or preheat a grill pan).
  4. Skewer: Thread chicken and pineapple alternately on soaked skewers; don’t pack too tightly.
  5. Grill: Cook 10–12 minutes, turning every 2–3 minutes, until lightly charred and chicken reaches 165°F (74°C).
  6. Rest & serve: Rest 3 minutes. Garnish with chives and serve with rice, salad, or grilled veggies.

Notes

For a spicier kick, add a pinch of red pepper flakes to the marinade. Serve with a side of jasmine rice or a fresh salad for a complete meal.
