- Make the marinade: In a bowl, whisk soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and pepper.
- Marinate: Add chicken cubes, toss to coat, cover, and chill 30 minutes (up to 4 hours).
- Preheat grill: Heat to medium-high and oil grates (or preheat a grill pan).
- Skewer: Thread chicken and pineapple alternately on soaked skewers; don’t pack too tightly.
- Grill: Cook 10–12 minutes, turning every 2–3 minutes, until lightly charred and chicken reaches 165°F (74°C).
- Rest & serve: Rest 3 minutes. Garnish with chives and serve with rice, salad, or grilled veggies.
Notes
For a spicier kick, add a pinch of red pepper flakes to the marinade. Serve with a side of jasmine rice or a fresh salad for a complete meal.
