Ingredients
  

Chicken
  • 2 tbsp Vegetable oil
  • 500 g Boneless skinless chicken breasts or thighs sliced into pieces
  • 200 g Fresh or canned pineapple cut into chunks
  • 2 tsp Minced garlic
  • 1 tsp Minced ginger
  • 150 ml Pineapple juice
  • 60 ml Soy sauce
  • 100 ml Chicken broth divided
  • 2 tbsp Hoisin sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Cornstarch mixed with cold water to form slurry

Method
 

  1. Dry the chicken pieces with paper towels and season with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat, then cook the chicken until browned.
  3. Deglaze the pan with chicken broth, add minced garlic and ginger, cooking until fragrant.
  4. In a bowl, combine pineapple juice, soy sauce, remaining broth, hoisin sauce, and brown sugar; pour this mixture into the skillet.
  5. Bring to a simmer, then thicken the sauce by adding a cornstarch slurry (cornstarch mixed with cold water).
  6. Garnish with sesame seeds before serving.

Notes

Serve with steamed rice or noodles for a complete meal. You can also add some sautéed vegetables for extra nutrition.
