Mastering Italian Dessert Zabaione

Ingredients
  

  • 4 count Egg Yolks room temperature for best results
  • 1/4 cup Granulated White Sugar to sweeten the custard
  • 1/4 cup Dry or Sweet Marsala Wine essential for traditional Zabaione flavor
  • 1 pinch Fine Sea Salt enhances the flavors
  • 1 cup Fresh Raspberries or Strawberries for serving, choose your favorite berry
  • 1 tsp Powdered sugar for dusting the berries, optional
  • 2-3 leaves Fresh Mint leaves for garnish, adds a fresh aroma

Method
 

  1. Fill a saucepan with 1-2 inches of water and bring it to a gentle simmer over medium low heat. Ensure the bottom of your mixing bowl will not touch the water once placed on top.
  2. In a heat proof bowl, combine the egg yolks and sugar. Whisk vigorously for 1-2 minutes until the mixture turns a pale, creamy yellow. Gradually whisk in the Marsala wine and salt.
  3. Place the bowl over the simmering water. Whisk constantly in a figure eight motion for 8-10 minutes until the mixture thickens significantly, triples in volume, and reaches the ribbon stage.
  4. Remove the bowl from the heat immediately. Continue whisking for another 30 seconds to slightly cool the mixture and stabilize the foam before serving over fresh berries.

Notes

Zabaione is best served immediately after preparation. For a non-alcoholic version, you can substitute Marsala with grape juice or a sweet white wine, though the flavor profile will differ.
