Lemon Curd Cookies

Deliciously tender cookies filled with a vibrant, tangy lemon curd. These cookies require chilling time for the dough, resulting in a perfectly buttery and melt-in-your-mouth texture.

Ingredients
  

  • 1 cup butter unsalted Ensure butter is at room temperature for easy creaming.
  • 1/2 cup granulated white sugar Fine granulated sugar will dissolve more easily.
  • 1 teaspoon vanilla Pure vanilla extract provides the best flavor.
  • 2 cup all purpose flour Spoon and level the flour to avoid a dense cookie.
  • 2 large egg yolks Separate yolks carefully; save whites for another recipe.
  • 1 pinch salt A small pinch of salt balances the sweetness of the cookies.
  • 3/4 cup lemon curd Use your favorite store-bought or homemade lemon curd.

Method
 

  1. Combine the flour and the salt and set aside.
  2. Add the butter and sugar to a large mixing bowl and mix on high until light and fluffy. This will take about 3-4 minutes.
  3. Add in the egg yolks and vanilla extract and mix on high for a minute. Add the flour and stir in until combined.
  4. Form the dough into a ball, wrap in plastic wrap and chill for about one hour.
  5. Line a baking tray with parchment paper and make about 36 balls with your dough. Place them evenly spaced out on your baking tray (in batches) and use your thumb to make an impression in the middle of each ball.
  6. Bake in a preheated 350 degree F/180 degrees C oven for about 12 minutes. Remove from oven and place on a cooling rack.
  7. Fill the centres with lemon curd while the cookies are still warm.
  8. Allow the cookies to cool and set at room temperature.
  9. Store in an airtight container between sheets of parchment paper. Keep in the fridge up to about four days.

Notes

These lemon curd cookies are best enjoyed at room temperature. For an extra touch, dust with powdered sugar before serving. They make a wonderful treat for tea time or a dessert spread.
