Ingredients
  

Brownies
  • 1 box yellow cake mix Use your favorite brand for consistent results (e.g., Betty Crocker).
  • 1 box lemon instant pudding Enhances the lemon flavor and contributes to a moist texture.
  • 1/3 cup lemon juice Freshly squeezed lemon juice will provide the best flavor.
  • 2 large eggs Ensure they are at room temperature for better emulsification with other ingredients.
  • 1 tsp lemon zest Adds an intense citrus aroma and brightens the overall flavor profile.
Glaze
  • 1 cup powdered sugar Sift before use to prevent lumps in the glaze.
  • 1 tbsp lemon juice Adjust the amount gradually to achieve your desired glaze consistency.
  • 1 tsp Lemon zest for garnishing A final touch to enhance the visual appeal and fresh lemon scent.

Equipment

  • 8-inch square baking dish
  • Parchment Paper
  • Cooking spray

Method
 

  1. Line an 8” square baking dish with parchment paper and spray with cooking spray so that the brownies lift out easily.
  2. Preheat the oven to 350 degrees.
  3. With a hand mixer, combine the cake mix, pudding, lemon juice, eggs, and lemon zest in a medium sized mixing bowl until well combined.
  4. Pour batter into the prepared pan and spread evenly.
  5. Bake for 22-24 minutes or until a toothpick can be inserted in the center and come out clean or with only crumbs (no wet batter).
  6. Remove from the oven and let cool in the pan for 10 minutes.
  7. Lift the parchment paper out of the pan and cool completely on a wire rack.
  8. Once cooled, cut brownies into squares.
  9. For the glaze, combine the powdered sugar and lemon juice together in a small bowl until smooth.
  10. Drizzle the glaze generously over the cooled brownies and sprinkle with additional lemon zest for garnishing.
