- In a large mixing bowl, beat together butter, cream cheese, and vanilla until smooth and creamy. Gradually add powdered sugar, mixing until well combined. Stir in shredded coconut until fully incorporated.
- Take small portions of the mixture and roll into balls or oblong “potato” shapes. If the mixture is too sticky, refrigerate for 20-30 minutes before shaping.
- Roll each candy piece in cinnamon to coat completely. For a more realistic “potato” look, lightly dust with powdered sugar after rolling.
- Place the coated candies on a parchment-lined baking sheet and refrigerate until firm, about 1 hour.
