  • 4 ounce cream cheese full-fat, softened for smooth consistency
  • 1 tsp vanilla extract pure vanilla extract for best flavor
  • 4 cup powdered sugar sifted to prevent lumps
  • 2.5 cup shredded coconut sweetened or unsweetened, depending on preference
For the Coating:
  • 1 cup cinnamon ground cinnamon for coating, provides a rustic 'potato skin' look
  • 0.25 cup powdered sugar optional, for a lighter, more realistic potato dusting

Method
 

  1. In a large mixing bowl, beat together butter, cream cheese, and vanilla until smooth and creamy. Gradually add powdered sugar, mixing until well combined. Stir in shredded coconut until fully incorporated.
  2. Take small portions of the mixture and roll into balls or oblong “potato” shapes. If the mixture is too sticky, refrigerate for 20-30 minutes before shaping.
  3. Roll each candy piece in cinnamon to coat completely. For a more realistic “potato” look, lightly dust with powdered sugar after rolling.
  4. Place the coated candies on a parchment-lined baking sheet and refrigerate until firm, about 1 hour.
