Irish Potato Candy

These delightful no-bake Irish Potato Candies are a sweet and festive treat, made with a creamy coconut filling coated in a spiced brown sugar mixture. Perfect for St. Patrick's Day or any sweet craving!

Ingredients
  

  • 113 g cream cheese Ensure it's at room temperature for smooth mixing.
  • 56 g unsalted butter Use unsalted to control the overall sweetness and flavor.
  • 480 g powdered sugar Sift if necessary to avoid lumps.
  • 200 g shredded coconut Sweetened or unsweetened works, adjust sugar if using unsweetened.
  • 5 ml pure vanilla extract Use good quality vanilla for best flavor.
  • 15 g ground cinnamon Freshly ground cinnamon will have a more potent aroma.
  • 110 g light brown sugar Press lightly into measuring cup.

Method
 

  1. Using a hand mixer, cream together the butter and cream cheese until combined and smooth.
  2. Beat in the vanilla until combined.
  3. Gradually mix in the powdered sugar until combined.
  4. Using a rubber spatula, fold in the shredded coconut.
  5. Cover with foil and place into the fridge for 1 hour.
  6. Line cookie sheet with parchment paper.
  7. Using a tablespoon, scoop out some of the mixture and roll it into a ball.
  8. Set onto the cookie sheet, repeat step until all of the mixture is rolled into a ball.
  9. In a medium bowl, whisk together the brown sugar and cinnamon.
  10. Coat each dough ball in the brown sugar mixture.
  11. Place onto a serving tray and continue the step until all balls have been coated
  12. Enjoy!

Notes

For an extra touch, you can add a drop of green food coloring to the cream cheese mixture before chilling to enhance the 'Irish' theme. Store the candies in an airtight container in the refrigerator for up to a week.
