Method
 

  1. In a large mixing bowl, combine the powdered sugar, peanut butter, softened butter, and vanilla extract. Mix until well blended and smooth.

  3. Using your hands, shape the mixture into small potato-shaped balls, about 1 inch in size.
  4. Roll each ball in cocoa powder to coat completely, giving them a realistic potato appearance.
  5. Place the coated candies on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.
