Irish Cabbage & Potato Dish

A comforting and hearty Irish dish combining tender potatoes and sautéed cabbage with onions, mashed to creamy perfection and seasoned to taste. Perfect as a side or a vegetarian main.

Ingredients
  

  • 800 g potatoes peeled and chopped, for mashing until smooth
  • 500 g green cabbage chopped, sauté until tender
  • 150 g onion chopped, sauté until translucent
  • 2 tbsp butter for sautéing the vegetables, can add more for richness
  • 120 ml milk warm, for creamy mashed potatoes
  • 1/2 tsp salt start with this amount and adjust to your taste
  • 1/4 tsp black pepper freshly ground, adjust to your taste
  • 2 tbsp fresh parsley finely chopped, for garnish before serving

Method
 

  1. In a large pot, add the chopped potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes until tender.
  2. While the potatoes are cooking, in another pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the chopped cabbage and sauté for an additional 5-7 minutes until the cabbage is tender.
  4. Once the potatoes are done cooking, drain them and return them to the pot.
  5. Add the milk, salt, and pepper to the potatoes. Mash until smooth and creamy.
  6. Fold the sautéed cabbage and onions into the mashed potatoes until well combined.
  7. Taste and adjust salt and pepper as necessary.
  8. Transfer the mixture to a serving dish and garnish with freshly chopped parsley.

Notes

This traditional Irish dish is a fantastic accompaniment to many meals, especially corned beef, or can be enjoyed as a hearty vegetarian main course. For extra richness, a knob of butter can be stirred in before serving. Adjust seasoning to your preference.
