Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
  5. Remove from the oven and transfer to a serving dish.
  6. Garnish with chopped fresh parsley.

Notes
