Ingredients
  

For the Boba
  • 2 tbsp Agar-Agar Powder Can use gelatin for non-vegan alternatives.
  • 1 cup Fruit Juice Fresh juice enhances flavor.
  • ½ cup Sugar Adjust based on juice sweetness or use honey.
  • 1 cup Water Filtered water is best.
For the Ice Bath
  • 1 bowl Ice Bath Ensure the water is ice-cold.

Method
 

  1. In a saucepan, heat 1 cup of your chosen fruit juice with ½ cup sugar until the sugar completely dissolves.
  2. Mix 2 tablespoons of agar-agar powder with 1 cup of water. Bring the mixture to a boil while stirring until it's slightly thickened.
  3. Slowly pour your agar-agar mixture into the fruit juice, whisking continuously to prevent lumps.
  4. Using a dropper or syringe, drop the mixture into an ice-cold water bath.
  5. Allow the beads to sit in the ice bath for at least 10 minutes until they solidify.

Notes

These homemade popping boba are best served fresh in cold beverages like iced tea, lemonade, or even cocktails. Store any leftovers in their ice bath liquid in an airtight container in the refrigerator for up to 3 days.
