- In a medium bowl, whisk together soy sauce, brown sugar, olive oil, garlic, ginger, and red pepper flakes.
- Cut chicken breasts into bite-sized pieces and add to the marinade. Let sit for 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 8-10 minutes.
- Add pineapple chunks to the skillet and cook for an additional 5 minutes until heated through.
- Serve hot over rice or noodles.
Notes
For a spicier kick, increase the amount of red pepper flakes. Serve with steamed rice or noodles for a complete meal.
