Ingredients
  

Chicken and Marinade
  • 680 g boneless skinless chicken breasts
  • 250 ml pineapple chunks fresh or canned, drained
  • 60 ml soy sauce
  • 30 g brown sugar
  • 15 ml olive oil
  • 5 ml minced garlic
  • 2.5 tsp ground ginger
  • 1.25 tsp red pepper flakes optional

Method
 

  1. In a medium bowl, whisk together soy sauce, brown sugar, olive oil, garlic, ginger, and red pepper flakes.
  2. Cut chicken breasts into bite-sized pieces and add to the marinade. Let sit for 10 minutes.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 8-10 minutes.
  4. Add pineapple chunks to the skillet and cook for an additional 5 minutes until heated through.
  5. Serve hot over rice or noodles.

Notes

For a spicier kick, increase the amount of red pepper flakes. Serve with steamed rice or noodles for a complete meal.
