  • 1 cup blueberries heaping, fresh or frozen
  • 1 bag spring mix salad greens about 4-5 ounces
  • 0.5 unit English cucumber chopped into bite-sized pieces
  • 0.5 cup mandarin orange segments canned or fresh, drained if canned
  • 0.25 cup dried cranberries for a sweet-tart chewiness
  • 2-4 TBSP roasted unsalted sunflower seeds for crunch and texture, adjust to taste
Blueberry Balsamic Dressing
  • 1 cup blueberries fresh or frozen, for blending into the dressing
  • 0.33 cup balsamic vinegar high-quality for best flavor profile
  • 2 TBSP red wine vinegar adds a tangy kick to the dressing
  • 2 TBSP dijon mustard helps emulsify the dressing and adds depth
  • 1 TBSP honey adjust to your sweetness preference
  • 1 tsp salt sea salt recommended for a cleaner taste
  • 0.125 tsp black pepper freshly ground for best aroma and flavor
  • 0.5 cup avocado oil or use olive oil for a different flavor profile

Method
 

  1. First, make your dressing: In a food processor or blender, combine all dressing ingredients except for the avocado oil. Blend until blueberries are completely pureed.
  2. With the food processor or blender running, use the little top cut-out to slowly drizzle in the avocado oil. Continue blending until the dressing is emulsified and well combined.
  3. Wash and thoroughly dry your spring mix salad greens.
  4. In a large bowl, combine the dried greens with the chopped English cucumber and the heaping cup of blueberries. Toss with a drizzle or two of the blueberry balsamic dressing, adding more as desired to coat lightly.
  5. Top the salad with mandarin orange segments, dried cranberries, and roasted unsalted sunflower seeds. Serve immediately and enjoy!

Notes

This salad is highly customizable! Feel free to add other ingredients like goat cheese, walnuts, or grilled chicken for a heartier meal. The dressing can be made ahead of time and stored in an airtight container in the refrigerator for up to a week.
