Ingredients
  

Cookie Dough
  • 190 g all-purpose flour
  • 42 g unsweetened cocoa powder
  • 1 cucchiaino baking powder
  • 1/4 cucchiaino salt
  • 150 g granulated sugar
  • 165 g brown sugar, packed
  • 2 large eggs
  • 1 cucchiaino vanilla extract
  • 120 g cinnamon sugar for coating

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, then add vanilla extract.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Cover the dough and refrigerate for about 30 minutes.
  6. In a small bowl, mix granulated sugar and ground cinnamon for the coating.
  7. Roll chilled dough into balls and coat in the cinnamon sugar mixture.
  8. Place cookie balls on the baking sheet, spaced 2 inches apart, and bake for 10-12 minutes.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies are great with a cup of coffee or tea. You can also try adding a pinch of nutmeg for an extra spice kick.
