- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, then add vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Cover the dough and refrigerate for about 30 minutes.
- In a small bowl, mix granulated sugar and ground cinnamon for the coating.
- Roll chilled dough into balls and coat in the cinnamon sugar mixture.
- Place cookie balls on the baking sheet, spaced 2 inches apart, and bake for 10-12 minutes.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
These cookies are great with a cup of coffee or tea. You can also try adding a pinch of nutmeg for an extra spice kick.
