- In a bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper until well combined.
- Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the prepared marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and allow it to marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
- Preheat your grill or stovetop pan to medium-high heat. Ensure it's hot enough to get a good sear on the chicken.
- Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
- Place the marinated chicken on the preheated grill or pan. Cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C). Avoid overcooking to maintain its juiciness.
- Once cooked, remove the chicken from the heat and let it rest on a cutting board for 5 minutes. This allows the juices to redistribute, keeping the chicken tender.
- Slice the chicken into strips or serve as whole pieces, based on your preference.
- Top with fresh cilantro if desired for a vibrant touch and fresh aroma. Serve immediately and enjoy!
Notes
This Chili Lime Chicken pairs wonderfully with rice, a fresh green salad, or tortillas for tacos. Feel free to adjust the spice level by adding more or less chili powder.
