- Prepare the Chicken Caesar Filling: In a bowl, mix chicken, Caesar dressing, Parmesan cheese, Dijon mustard (if using), garlic powder, and black pepper until well combined.
- Assemble the Sandwiches: Place chopped romaine lettuce on the bottom half of each croissant. Spoon the chicken mixture over the lettuce. Add sliced cherry tomatoes if desired.

Notes
For a healthier option, use whole-wheat croissants and low-fat Caesar dressing. The rotisserie chicken adds a nice flavor, but any cooked chicken will work.
