  • 4 croissants, halved
Chicken Caesar Filling
  • 2 cups cooked chicken, shredded or chopped rotisserie works well
  • 120 ml Caesar dressing
  • 25 g grated Parmesan cheese
  • 1 tsp Dijon mustard optional
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 50 g romaine lettuce, chopped
  • 75 g cherry tomatoes, sliced optional
  • to taste extra Parmesan shavings for garnish
  • to taste lemon wedges optional, for serving

Method
 

  1. Prepare the Chicken Caesar Filling: In a bowl, mix chicken, Caesar dressing, Parmesan cheese, Dijon mustard (if using), garlic powder, and black pepper until well combined.
  2. Assemble the Sandwiches: Place chopped romaine lettuce on the bottom half of each croissant. Spoon the chicken mixture over the lettuce. Add sliced cherry tomatoes if desired.
  3. Complete the Sandwich: Place the top half of the croissant over the filling. Garnish with extra Parmesan shavings and serve with a lemon wedge for a citrusy touch.

Notes

For a healthier option, use whole-wheat croissants and low-fat Caesar dressing. The rotisserie chicken adds a nice flavor, but any cooked chicken will work.
