Ingredients
  

Chicken
  • 2 pieces chicken breasts butterflied
  • 2 tablespoons extra-virgin olive oil
  • 1.5 tsp kosher salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp freshly-cracked black pepper
  • 1 tablespoon grass-fed butter
  • 120 ml Buffalo sauce such as Frank's Red Hot
Wraps
  • 1 head romaine lettuce thinly shredded
  • 0.5 piece red onion thinly sliced
  • 1 bottle Miso Caesar dressing homemade or store-bought
  • 4 pieces Siete burrito size grain-free wraps

Method
 

  1. Butterfly the chicken breasts in half for even cooking. In a bowl, mix together olive oil, salt, paprika, garlic powder, and black pepper with the chicken; set aside.
  2. Preheat a griddle over medium-high heat and cook the chicken until golden brown, about 5 minutes per side or until it reaches an internal temperature of 160°F. Cover with foil to keep warm.
  3. In a small saucepan, melt the butter then whisk in the Buffalo sauce until smooth. Toss the cooked chicken in this mixture.
  4. Warm each wrap on the griddle for about 10–15 seconds per side. Assemble by placing Buffalo chicken, shredded lettuce, onion slices, and Miso Caesar dressing in each wrap before rolling tightly.
  5. Toast the assembled wraps on the griddle until golden brown on both sides, about three minutes each.

Notes

These wraps are perfect for a quick lunch or dinner. Feel free to adjust the level of spice by altering the amount of Buffalo sauce.
