Ingredients
  

  • 2 cup mixed salad greens Thoroughly wash and dry before use.
  • 1 cup fresh blueberries Gently rinse and drain.
  • 0.5 cup shelled pistachios Roughly chop for added crunch.
  • 0.25 cup crumbled feta cheese Adds a salty, tangy flavor.
  • 0.25 cup red onion Thinly slice for a mild bite.
For the Dressing
  • 0.25 cup extra virgin olive oil Use a good quality oil for best flavor.
  • 2 tbsp honey Sweetens the dressing; adjust to taste.
  • 1 tbsp balsamic vinegar Provides a tangy base for the dressing.
  • 1 tsp Dijon mustard Helps emulsify the dressing and adds a slight kick.
  • 0.25 tsp salt Season to enhance flavors; adjust to your preference.
  • 0.25 tsp black pepper Freshly ground for the best aroma and taste.

Method
 

  1. Wash the mixed salad greens thoroughly under cold water. Pat dry with a clean towel or use a salad spinner. Place in a large salad bowl.
  2. Rinse the fresh blueberries gently in cold water and remove any stems or leaves. Set aside.
  3. Roughly chop the shelled pistachios. Sprinkle them evenly over the salad greens.
  4. Crumble the feta cheese and add it evenly on top of the greens.
  5. Peel and thinly slice the red onion. Add to the salad.
  6. In a small bowl, whisk together the extra virgin olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well emulsified.
  7. Pour the dressing evenly over the salad. Toss gently with tongs or salad servers until all ingredients are lightly coated.
  8. Taste and adjust seasoning with more salt or pepper if needed.
  9. Serve immediately or refrigerate for a short time if a chilled salad is preferred.

Notes

This salad is highly customizable! Feel free to add grilled chicken for a heartier meal, or swap out the feta for goat cheese. Enjoy fresh!
