Ingredients
  

Dry Ingredients
  • 180 g all-purpose flour
  • 45 g unsweetened cocoa powder
  • 1 cucchiaino baking soda
  • 0.25 cucchiaino salt
Wet Ingredients
  • 115 g unsalted butter, softened
  • 150 g granulated sugar
  • 50 g brown sugar
  • 1 large egg
  • 1 cucchiaino vanilla extract
  • 120 ml blueberry jam
  • as desired purple food coloring optional
  • 50 g granulated sugar for sprinkling

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the unsalted butter, granulated sugar, and brown sugar using a hand mixer until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and blend until combined. Add purple food coloring if desired.
  5. Gradually fold the flour mixture into the wet ingredients using a spatula, mixing until just combined.
  6. Scoop about 2 tablespoons of dough, flatten into a disk, and place 1 teaspoon of blueberry jam in the center. Wrap dough around jam and seal edges.
  7. Roll the filled dough balls in granulated sugar and place on prepared baking sheets, 2 inches apart.
  8. Bake for 10-12 minutes until edges are set. Cool on pan for 5 minutes, then transfer to a wire rack.

Notes

These cookies are perfect with a glass of cold milk. Try experimenting with different jams for a variety of flavors.
