  • 23 tbsp mayonnaise
  • 12 stalks celery, finely chopped
  • 12 tbsp fresh lemon juice
  • 1 tbsp chopped chives or green onions
  • 46 tbsp unsalted butter, melted
  • 46 New England-style split-top buns
  • Salt and pepper to taste
  • Optional: dash of hot sauce, dill, parsley, or paprika

Instructions

  1. If using live lobsters, boil in salted water for 8–10 minutes. Cool in ice bath and extract meat. Chop into bite-sized pieces.
  2. In a bowl, mix lobster meat with mayo, celery, lemon juice, and chives. Season with salt, pepper, and optional hot sauce.
  3. Butter the buns and toast in a skillet or griddle over medium heat until golden brown on both sides.
  4. Optional: Warm the lobster meat in a skillet with melted butter for 2–3 minutes.
