- 1 lb cooked lobster meat (from 2–3 lobsters or frozen tails)
- 2–3 tbsp mayonnaise
- 1–2 stalks celery, finely chopped
- 1–2 tbsp fresh lemon juice
- 1 tbsp chopped chives or green onions
- 4–6 tbsp unsalted butter, melted
- 4–6 New England-style split-top buns
- Salt and pepper to taste
- Optional: dash of hot sauce, dill, parsley, or paprika
Instructions
- If using live lobsters, boil in salted water for 8–10 minutes. Cool in ice bath and extract meat. Chop into bite-sized pieces.
- In a bowl, mix lobster meat with mayo, celery, lemon juice, and chives. Season with salt, pepper, and optional hot sauce.
- Butter the buns and toast in a skillet or griddle over medium heat until golden brown on both sides.
- Optional: Warm the lobster meat in a skillet with melted butter for 2–3 minutes.
- Fill toasted buns with lobster salad or warm lobster meat. Garnish with extra chives or black pepper. Serve immediately.
