- 1 cup mascarpone cheese
- 1 cup pumpkin puree
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 3/4 cup brewed espresso or strong coffee, cooled
- 24 ladyfingers (savoiardi)
- 2 tablespoons cocoa powder (for dusting)
Instructions
- Whip the heavy cream in a chilled bowl until soft peaks form.
- In a separate bowl, mix mascarpone, pumpkin puree, sugar, pumpkin pie spice, and vanilla extract until smooth.
- Gently fold the whipped cream into the pumpkin-mascarpone mixture.
- Quickly dip each ladyfinger into the cooled espresso for 1–2 seconds.
- Arrange half of the dipped ladyfingers in an 8×8-inch dish.
- Spread half of the pumpkin cream mixture evenly over the ladyfingers.
- Repeat with the remaining ladyfingers and the remaining cream.
- Cover and refrigerate for at least 4 hours or overnight.
- Dust with cocoa powder before serving.
Notes
For best texture and flavor, chill overnight. Use pure pumpkin puree, not pumpkin pie filling.
