  • 4 large russet potatoes (or sweet potatoes)
  • 1 lb ground beef (or turkey / plant-based)
  • 1 packet taco seasoning (or homemade blend)
  • 1 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/¼ cup sliced black olives
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce each 8–10 times with a fork.
  2. Rub potatoes with olive oil, salt, and pepper. Bake for 45 minutes until fork-tender.
  3. Meanwhile, cook ground beef in a skillet over medium heat until browned (6–8 minutes). Drain excess fat.
  4. Add taco seasoning and 1/2 cup water. Simmer 5 minutes until thickened.
  5. Remove baked potatoes from oven and cool 3–4 minutes. Slice lengthwise and gently squeeze to create a cavity.
  6. Fill each potato with seasoned beef, top with cheddar cheese, and bake 5 minutes until melted and bubbly.
  7. Finish with sour cream, tomatoes, green onions, olives, and cilantro. Serve warm.

Notes

Use freshly grated cheddar for the best melt. For a healthier version, substitute Greek yogurt for sour cream or use ground turkey instead of beef.
