- 1 lb Italian sausage
- 1 tsp crushed red pepper flakes
- 1 large white onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 5 large potatoes, thinly sliced
- 2 cups chopped kale
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot and brown the sausage with red pepper flakes.
- Remove sausage, drain excess fat, and sauté onion and garlic until soft.
- Add broth, water, and potatoes; simmer until potatoes are tender.
- Return sausage to the pot and stir in kale; cook until wilted.
- Reduce heat and stir in heavy cream without boiling.
- Season with salt and pepper and serve hot.
Notes
Add cream off heat to avoid curdling. Thinly slice potatoes for even cooking and best texture.
