A quick and nutritious salmon sandwich with fresh herb mayonnaise, packed with omega-3s and gourmet flavor.

- 1 garlic clove, minced
- ¾ cup mayonnaise
- 2 tablespoons fresh lemon juice
- 2 tablespoons finely chopped fresh basil
- 1 teaspoon finely chopped fresh dill
- ½ teaspoon Dijon mustard
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 skinless center-cut salmon fillets (about 6 ounces each)
- 2 tablespoons canola oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Nonstick cooking spray
- 4 brioche hamburger buns, split
- 4 butter lettuce leaves
Instructions
- In a bowl, mix garlic, mayonnaise, lemon juice, basil, dill, mustard, salt, and pepper to make the herb mayo.
- Preheat grill to medium-high and clean grates thoroughly.
- Pat salmon dry, rub with canola oil, and season with salt and pepper.
- Spray grill with nonstick spray, grill salmon 4–6 minutes per side, until internal temp reaches 125°F, then rest for 5 minutes.
- Spread herb mayo on buns, add lettuce, top with salmon, then close the sandwich and serve immediately.
Notes
Let salmon rest after grilling to retain juices. Swap mayo with Greek yogurt for a lighter spread. Use whole grain buns for added fiber.
