- 2 tablespoons chopped celery
- 1 tablespoon chopped onion
- 1 tablespoon chopped red bell pepper
- Splash of olive oil
- 1 cup Goldfish crackers, crushed
- ½ cup mild cheddar cheese, shredded
- ¼ pound crab claw meat
- ¼ teaspoon garlic powder
- ¼ teaspoon Old Bay seasoning
- 1 cup chopped onion (for second sauté)
- ½ cup chopped red bell pepper (for second sauté)
- 2 tablespoons olive oil (for second sauté)
- 1 tablespoon Red Lobster copycat seasoning
- Extra crushed saltine crackers
- Additional mild cheddar cheese (for second sauté)
Instructions
- Clean mushrooms with cold water and remove stems. Wipe dry with damp towel.
- Heat olive oil in a skillet. Sauté chopped celery, onion, and bell pepper for 3–4 minutes until soft.
- Add crab claw meat, garlic powder, and Old Bay seasoning. Mix gently.
- Fold in crushed Goldfish crackers and shredded cheddar cheese. Stir until cohesive.
- In separate pan, sauté 1 cup onion and ½ cup red bell pepper in 2 tablespoons olive oil. Season with Red Lobster seasoning and Old Bay. Add crushed saltine crackers and cheese.
- Adjust stuffing texture: add oil if too dry, more crushed crackers if too wet.
- Arrange mushroom caps on baking sheet. Fill each with a heaping tablespoon of stuffing.
- Preheat oven to 375°F (190°C). Bake for 18–20 minutes until golden and bubbling.
- Broil for 1–2 minutes for a crispier top if desired.
Notes
Avoid overfilling mushrooms. Use fresh or canned crab meat. To keep stuffing balanced, maintain moisture without sogginess. Pat mushrooms dry before baking.
