  1. Add the salt, pepper, and cornflour (cornstarch) to a bowl with the chicken thighs. Coat the chicken completely with cornflour by tossing it in it.
  2. Heat the oil in a large frying pan (skillet) over a high heat.
  3. Add the chicken thighs and cook on one side until golden brown, about 5 minutes, then flip the other side and cook for another 2 minutes.
  4. Add the butter to the pan, let it melt, then add the garlic and stir together. Turn the heat down to medium so the garlic doesn't burn, then make the sauce.
  5. To make the sauce, combine the honey, stock, rice vinegar and light soy sauce in a bowl and mix.

  6. Add the sauce to the pan. Increase the heat and bring the sauce to a boil, then cook for 5 minutes until the sauce has reduced and thickened, and the chicken is cooked through.

  7. Sprinkle on the chopped parsley and chilli flakes and serve over boiled rice

Can I make this gluten free?

Can I replace the chicken thighs with chicken breast?

You are capable of doing this, yes. While chicken breasts can be substituted, chicken thighs are somewhat more tender and can withstand high-heat cooking without drying out. To make sure the chicken cooks through quickly and evenly in the pan, I would suggest slicing the chicken breast into thick strips or flattening the meat with a rolling pin.

Can I freeze it?

Sure, the chicken will still taste fantastic even though it won't be quite as soft. Cook, allow to cool rapidly, cover, and freeze the chicken. Place in the fridge to defrost overnight, then reheat on a baking tray at 180C/350F. To assist keep the chicken from drying out, cover it with foil before putting it in the oven.

Cook for a total of 12 to 15 minutes, or until very hot.
