Instructions
- Pound chicken breasts to 1/2-inch thickness and season with salt and pepper.
- Set up dredging bowls for flour, beaten eggs, and panko mixed with Pecorino Romano.
- Dredge chicken in flour, then egg, then panko-cheese mixture, pressing to coat.
- Heat olive oil in a skillet and fry chicken 4–5 minutes per side until golden and cooked to 165°F.
- Remove chicken and drain on paper towels.
- Melt butter in the same skillet and sauté garlic for 1 minute.
- Add lemon zest, lemon juice, and remaining cheese; simmer 1–2 minutes.
- Spoon sauce over chicken and garnish with parsley before serving.
