Instructions
- Add the egg, ground mustard, salt, and lemon juice to a wide-mouthed jar.
- Pour the avocado oil gently over the mixture without stirring.
- Place the immersion blender at the bottom of the jar and blend until thick and creamy, slowly lifting as it emulsifies.
- Taste and adjust seasoning by adding more salt or lemon as needed.
Notes
Use room-temperature ingredients to prevent curdling. If the mayo breaks, add a teaspoon of hot water and re-blend.
