- Salt, pepper, garlic powder (to season)
- 4 large flour tortillas
- 1 cup shredded cheddar or American cheese
- Optional: pickles, diced onions, burger sauce for serving
Instructions
- Season 1 lb ground beef with salt, pepper, and garlic powder.
- Heat a skillet or griddle over medium-high heat.
- Press a small handful of seasoned beef directly onto one half of each tortilla, flattening to form a thin patty layer.
- Cook beef side down for 2–3 minutes until browned and crispy.
- Flip the tortilla, sprinkle 1/4 cup shredded cheese on the cooked beef side, fold the tortilla in half, and grill both sides until crispy and cheese is melted.
- Slice each quesadilla into wedges and serve with pickles, diced onions, or burger sauce as desired.
Notes
Use medium-high heat for a crispy exterior. Press beef thinly and evenly for best ‘smash’ texture. Swap tortillas for whole wheat or use lower-fat cheese for a lighter version.
