Ingredients

  • 1 lb ground beef
  • Salt, pepper, garlic powder (to season)
  • 4 large flour tortillas
  • 1 cup shredded cheddar or American cheese
  • Optional: pickles, diced onions, burger sauce for serving

Instructions

  1. Season 1 lb ground beef with salt, pepper, and garlic powder.
  2. Heat a skillet or griddle over medium-high heat.
  3. Press a small handful of seasoned beef directly onto one half of each tortilla, flattening to form a thin patty layer.
  4. Cook beef side down for 2–3 minutes until browned and crispy.
  5. Flip the tortilla, sprinkle 1/4 cup shredded cheese on the cooked beef side, fold the tortilla in half, and grill both sides until crispy and cheese is melted.
  6. Slice each quesadilla into wedges and serve with pickles, diced onions, or burger sauce as desired.

Notes

Use medium-high heat for a crispy exterior. Press beef thinly and evenly for best ‘smash’ texture. Swap tortillas for whole wheat or use lower-fat cheese for a lighter version.
