- 4 fresh lobster tails (6–8 oz each) or 1.5 cups cooked lobster meat
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- 1 pound elbow macaroni or cavatappi pasta
- 4 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2.5 cups whole milk
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and white pepper to taste
- 2 cups sharp cheddar cheese, grated
- 1 cup Gruyère cheese, grated
- 1/2 cup Parmesan cheese, grated
- 4 oz cream cheese, softened
- 1 cup panko breadcrumbs
- 2 tablespoons melted butter
- 1/4 cup additional Parmesan cheese
- Fresh chives for garnish
Instructions
- Bring a large pot of salted water to a boil. Add lobster tails and boil 8-10 minutes until bright red. Transfer to ice bath, then extract meat and chop into chunks.
- In same pot, cook pasta until just under al dente. Drain and set aside.
- In a saucepan, melt 4 tbsp butter. Add flour and whisk 2 minutes to form a roux. Slowly add milk and cream, whisking constantly.
- When thickened, reduce heat and stir in cream cheese, cheddar, Gruyère, and Parmesan. Season with garlic powder, onion powder, smoked paprika, salt, and white pepper.
- Fold pasta into cheese sauce. Gently add lobster meat. Mix to combine.
- Transfer to buttered 9×13 inch baking dish. Mix panko, melted butter, and Parmesan in a bowl and sprinkle over top.
- Bake at 375°F for 25-30 minutes until golden and bubbling. Let rest 5-10 minutes.
- Garnish with chopped chives and serve warm.
Notes
Use freshly grated cheese for smooth melting. Slightly undercook the pasta to avoid mushy texture. For make-ahead, assemble and refrigerate up to 24 hours before baking.
