Description

A no-bake, vegan-friendly Date Snickers recipe made with Medjool dates, peanuts, nut butter, and dark chocolate for a wholesome, naturally sweet twist on the classic candy bar.

Ingredients

Scale
  • 1 cup pitted Medjool dates
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup roasted peanuts (unsalted)
  • 1/2 cup almond butter or peanut butter
  • 1 cup dark chocolate chips (vegan if needed)
  • Optional: pinch of cinnamon or unsweetened coconut flakes

Instructions

  1. Soak dates in warm water for 10–15 minutes to soften.
  2. Drain dates and blend with water, vanilla, and salt until smooth and creamy.
  3. In a bowl, mix almond or peanut butter with half of the peanuts to form a nougat base. Press into a lined 8×8-inch dish.
  4. Spread the blended date caramel evenly over the nougat layer and sprinkle remaining peanuts on top.
  5. Melt dark chocolate and pour over the top. Smooth with a spatula.
  6. Refrigerate for at least 60 minutes until set.
  7. Slice into bars and enjoy. Store in the fridge for up to 1 week or freeze for longer storage.

Notes

For extra crunch, add chia seeds or shredded coconut before the chocolate layer. For a nut-free version, use sunflower seed butter and roasted seeds instead of peanuts.
