Description
A no-bake, vegan-friendly Date Snickers recipe made with Medjool dates, peanuts, nut butter, and dark chocolate for a wholesome, naturally sweet twist on the classic candy bar.
Ingredients

- 1 cup pitted Medjool dates
- 1/2 cup water
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 cup roasted peanuts (unsalted)
- 1/2 cup almond butter or peanut butter
- 1 cup dark chocolate chips (vegan if needed)
- Optional: pinch of cinnamon or unsweetened coconut flakes
Instructions
- Soak dates in warm water for 10–15 minutes to soften.
- Drain dates and blend with water, vanilla, and salt until smooth and creamy.
- In a bowl, mix almond or peanut butter with half of the peanuts to form a nougat base. Press into a lined 8×8-inch dish.
- Spread the blended date caramel evenly over the nougat layer and sprinkle remaining peanuts on top.
- Melt dark chocolate and pour over the top. Smooth with a spatula.
- Refrigerate for at least 60 minutes until set.
- Slice into bars and enjoy. Store in the fridge for up to 1 week or freeze for longer storage.
Notes
For extra crunch, add chia seeds or shredded coconut before the chocolate layer. For a nut-free version, use sunflower seed butter and roasted seeds instead of peanuts.
