- 6 large eggs
- 1 ripe avocado (or 2 tablespoons mayonnaise)
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon Greek yogurt or sour cream (optional)
- 1 tablespoon finely chopped chives or parsley
- Salt and black pepper, to taste
- Paprika or chili flakes (for decoration)
- Chopped red bell pepper or pimentos
- Yellow bell pepper or cheese (cut into small stars)
- Fresh dill or parsley (for garnish)
Instructions
- Place eggs in a pot of cold water and bring to a boil. Cover, remove from heat, and let sit for 10–12 minutes. Transfer to ice water for 5 minutes.
- Peel eggs under running water and slice in half lengthwise. Scoop out yolks and set whites on a platter.
- Mash yolks with avocado or mayonnaise until smooth. Add mustard, lemon juice, salt, pepper, and optional Greek yogurt. Fold in herbs.
- Transfer filling to a piping bag and pipe into egg whites, creating tree-shaped swirls.
- Decorate with paprika or chili flakes, red bell pepper pieces, and small yellow pepper or cheese stars.
- Arrange on a platter with fresh dill or parsley and serve.
Notes
Shock-cooling the eggs in ice water ensures smooth peeling. For the brightest green filling, prepare and serve immediately to prevent avocado browning.
