- 2 (5-ounce) salmon filets, skin on
- 1/4 teaspoon each salt and black pepper
- 2 tablespoons garlic, divided
- 1.5 tablespoons salted butter
- 8 ounces white or cremini mushrooms, cleaned and halved
- 1/2 red onion, coarsely chopped
- 3 cups fresh spinach, coarsely chopped
- Olive oil, for searing
Instructions
- Pat the salmon filets dry and season both sides with salt, pepper, and 1 tablespoon of garlic.
- Heat olive oil in a skillet over medium-high heat. Sear salmon skin side up for 3 minutes until golden. Remove and set aside.
- In the same skillet, melt butter. Add mushrooms and red onion. Sauté for 3 minutes.
- Add remaining garlic and cook for 30 seconds. Stir in spinach and cook until wilted.
- Return salmon to the skillet, skin side down. Cover and cook for 3–5 more minutes until done.
- Season with more salt and pepper if needed. Serve hot, topped with buttery mushrooms and spinach.
