  • 2 (5-ounce) salmon filets, skin on
  • 1/4 teaspoon each salt and black pepper
  • 2 tablespoons garlic, divided
  • 1.5 tablespoons salted butter
  • 8 ounces white or cremini mushrooms, cleaned and halved
  • 1/2 red onion, coarsely chopped
  • 3 cups fresh spinach, coarsely chopped
  • Olive oil, for searing

Instructions
