Description

Ingredients

  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions

  1. Measure out all ingredients and finely mince the garlic.
  2. Add olive oil, lemon juice, vinegar, mustard, honey, garlic, oregano, salt, and pepper to a blender and blend 20–30 seconds until smooth.
  3. If whisking by hand, combine all ingredients except olive oil, then drizzle oil in slowly while whisking to emulsify.
  4. Transfer to a jar and refrigerate 30 minutes before serving; adjust seasoning to taste.

Notes

Do not over-blend; it can cause bitterness. Always taste and adjust for sweetness or acidity.
