A bright, tangy homemade lemon vinaigrette that comes together in minutes, bursting with citrus flavor and perfect for salads, grains, or grilled veggies.
Ingredients

- 1/2 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp apple cider vinegar
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Measure out all ingredients and finely mince the garlic.
- Add olive oil, lemon juice, vinegar, mustard, honey, garlic, oregano, salt, and pepper to a blender and blend 20–30 seconds until smooth.
- If whisking by hand, combine all ingredients except olive oil, then drizzle oil in slowly while whisking to emulsify.
- Transfer to a jar and refrigerate 30 minutes before serving; adjust seasoning to taste.
Notes
Do not over-blend; it can cause bitterness. Always taste and adjust for sweetness or acidity.
