Description
A smooth, naturally sweet caramel made from Medjool dates—rich, creamy, and perfect for drizzling over desserts, fruit, or breakfast dishes without refined sugar.

- 1 cup pitted Medjool dates
- 1/2 cup water or plant-based milk (coconut, almond, or oat milk)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- Optional: 1-2 tbsp maple syrup or coconut sugar
- Optional: 1/4 tsp ground cinnamon
- Optional: pinch of nutmeg or cardamom
- Optional: 1/4 cup almond or cashew butter
- Optional: 2-3 tbsp melted coconut oil
Instructions
- Soak pitted Medjool dates in warm water for 10–15 minutes to soften.
- Drain and transfer dates to a blender or food processor.
- Add 1/2 cup water or milk, vanilla, and sea salt.
- Blend for 3–5 minutes until smooth and creamy.
- Adjust consistency by adding reserved soaking liquid as needed.
- Taste and adjust sweetness or salt to preference.
- Optional: Warm blended sauce for 2–3 minutes over low heat for deeper flavor.
- Cool and store in an airtight glass jar in the refrigerator for up to 2 weeks.
Notes
For a thicker, richer texture, use coconut milk or add nut butter. Refrigerate leftovers and stir before serving.
