Description

A smooth, naturally sweet caramel made from Medjool dates—rich, creamy, and perfect for drizzling over desserts, fruit, or breakfast dishes without refined sugar.


Ingredients

  • 1 cup pitted Medjool dates
  • 1/2 cup water or plant-based milk (coconut, almond, or oat milk)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1-2 tbsp maple syrup or coconut sugar
  • Optional: 1/4 tsp ground cinnamon
  • Optional: pinch of nutmeg or cardamom
  • Optional: 1/4 cup almond or cashew butter
  • Optional: 2-3 tbsp melted coconut oil

Instructions

  1. Soak pitted Medjool dates in warm water for 10–15 minutes to soften.
  2. Drain and transfer dates to a blender or food processor.
  3. Add 1/2 cup water or milk, vanilla, and sea salt.
  4. Blend for 3–5 minutes until smooth and creamy.
  5. Adjust consistency by adding reserved soaking liquid as needed.
  6. Taste and adjust sweetness or salt to preference.
  7. Optional: Warm blended sauce for 2–3 minutes over low heat for deeper flavor.
  8. Cool and store in an airtight glass jar in the refrigerator for up to 2 weeks.

Notes

For a thicker, richer texture, use coconut milk or add nut butter. Refrigerate leftovers and stir before serving.
