Ingredients

  • ⅓ cup unsweetened cocoa powder
  • ¼ tsp salt
  • ½ cup unsalted butter (or coconut oil)
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8-inch square pan with parchment paper.
  2. Melt butter in a saucepan over low heat. Remove from heat.
  3. Stir in granulated sugar and brown sugar until smooth. Cool for 5 minutes.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. In another bowl, sift together flour, cocoa powder, and salt.
  6. Fold dry ingredients into wet ingredients until just combined. Do not overmix.
  7. Pour batter into pan and bake for 20–25 minutes until a toothpick comes out with moist crumbs.
  8. Cool completely before slicing into 16 squares.
