Ingredients

Scale
  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 12 tbsp Sriracha sauce
  • 1 tbsp honey
  • 1 lb chicken tenderloins
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 cups panko breadcrumbs
  • 2 cups canola oil
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Whisk mayonnaise, sweet chili sauce, Sriracha, and honey until smooth; adjust spice to taste.
  2. Mix buttermilk, flour, cornstarch, egg, garlic powder, salt, pepper, and cayenne, then coat chicken and marinate 10 minutes.
  3. Coat each chicken piece in panko, pressing gently for adhesion.
  4. Heat oil to 365°F and fry chicken 2–3 minutes per side until golden and cooked through.
  5. Toss fried chicken in bang bang sauce and garnish with parsley before serving.

Notes

Fry in batches to maintain oil temperature for maximum crunch. Sauce only when ready to serve to keep coating crispy.
