Ingredients
Scale
- 1.5 lbs boneless, skinless chicken thighs
- 4 cups low-sodium chicken broth
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt

- 2 tbsp unsalted butter, melted
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- Heat oil or butter in a large pot and sauté onion, carrots, celery, and garlic for 5 minutes.
- Add chicken thighs, season with thyme, salt, and pepper, then pour in chicken broth. Simmer 15 minutes until chicken is cooked.
- Whisk flour, baking powder, and salt in a bowl. Stir in milk and melted butter until a soft dough forms.
- Spoon dough into the simmering stew, cover, and cook 10–12 minutes without lifting the lid.
- Stir in parsley, adjust seasonings, and serve warm.
Notes
Avoid overmixing dumpling dough for fluffier results. Let the dough rest briefly for extra softness.
