Ingredients

  • 1.5 lbs chicken thighs or breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning (for chicken)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1 large yellow onion, diced
  • 2 stalks celery, diced
  • 1 large green bell pepper, diced
  • 45 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning (for soup)
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp sliced green onions (optional)

Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Sear chicken in olive oil until golden; remove and set aside.
  3. Melt butter and whisk in flour to form a roux; cook until golden.
  4. Add onion, celery, and bell pepper; sauté until softened.
  5. Stir in garlic, Cajun seasoning, smoked paprika, thyme, and cayenne.
  6. Gradually whisk in chicken broth; add bay leaf and return chicken.
  7. Simmer 20-25 minutes until chicken is cooked through.
  8. Remove bay leaf and adjust seasoning.
  9. Stir in heavy cream off heat.
  10. Serve hot, garnished with parsley and green onions.

Notes

Avoid boiling after adding cream to prevent curdling. Adjust cayenne to control spice level.
