Description

Rich, fudgy, and naturally gluten-free, these black bean brownies transform pantry staples into a decadent chocolate treat without sacrificing texture or flavor.


Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 2 large eggs
  • 1/3 cup melted coconut oil or butter
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup coconut sugar or brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • Extra chocolate chips for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch pan with parchment.
  2. In a food processor, blend black beans, eggs, coconut oil, cocoa powder, sugar, vanilla, baking powder, and salt until completely smooth.
  3. Transfer batter to a bowl and fold in chocolate chips.
  4. Pour batter into prepared pan and smooth the top; add extra chips if desired.
  5. Bake 22–25 minutes, checking for a toothpick with moist crumbs.
  6. Cool completely on a wire rack before slicing.
  7. Cut into squares and serve; refrigerate leftovers for freshness.

Notes

Drain beans very well to avoid runny batter. Cool fully for clean, even slices.
