- 1 pound dried 15 bean mix
- 2 quarts water or vegetable broth
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: 1–2 cups chopped ham or sausage
- Optional: 1 cup chopped carrots
- Optional: 1 cup chopped celery
- Optional: 1 tablespoon hot sauce
- Optional garnish: chopped fresh parsley
Instructions
- Rinse and sort the dried 15 bean mix.
- Add beans to the slow cooker with water or broth.
- Stir in onion, garlic, and bay leaves.
- Add thyme, oregano, and smoked paprika.
- Mix in diced tomatoes with their juices.
- Add optional ham, sausage, carrots, or celery if using.
- Cover and cook on low for 8–10 hours or high for 4–6 hours.
- In the last hour, stir in lemon juice, salt, pepper, and optional hot sauce.
- Remove bay leaves before serving.
- Garnish with parsley and enjoy.
Notes
Add salt at the end for best texture. No soaking required for the beans in a crock pot.
