Ingredients

  • 1 cup butter
  • 1 cup cocoa powder
  • 2¼ cups sugar
  • ¾ tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1¼ cups all-purpose flour
  • 6 tbsp softened butter (for frosting)
  • 3 cups powdered sugar
  • 1 tsp mint extract
  • 23 tbsp heavy cream or milk
  • Green food coloring (optional)
  • 1½ cups semi-sweet chocolate chips
  • 2 tbsp butter or canola oil
  • ½ tsp mint extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan. Optionally dust with cocoa powder.
  2. In a microwave-safe bowl, combine butter, cocoa powder, and sugar. Microwave in 1-minute intervals, stirring each time, until smooth.
  3. Transfer to mixing bowl. Add salt, vanilla, and eggs one at a time, mixing until glossy and combined.
  4. Fold in flour until just combined. Spread batter evenly in pan and bake 30–35 minutes, until a toothpick comes out with moist crumbs.
  5. Cool for at least 15 minutes before adding frosting.
  6. For the frosting: Beat softened butter, powdered sugar, mint extract, and 2 tbsp cream until smooth. Add more cream if needed for spreadable consistency. Tint with green food coloring if desired. Spread evenly over cooled brownies.
  7. For the topping: Melt chocolate chips with butter in microwave, stirring until smooth. Add mint extract if desired. Pour over frosted brownies and spread evenly.
  8. Chill until the chocolate sets, then slice and serve.

Notes

Store brownies in an airtight container at room temperature for up to 2–3 days or refrigerate for 3–4 days. For longer storage, freeze individually wrapped squares for up to 3 months. Serve slightly chilled or at room temperature for best flavor.
