  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Brown ground beef with diced onion in a skillet for 5–7 minutes. Drain excess fat.
  3. Add garlic, cumin, and chili powder. Cook 1 minute until fragrant.
