Instructions

  1. Melt butter in a pot over medium heat. Sauté shallots, garlic, and celery for 4–5 minutes until softened.
  2. Stir in tomato paste and cayenne pepper; cook 2 minutes to deepen flavor.
  3. Pour in dry sherry to deglaze, scraping up brown bits; simmer 2 minutes.
  4. Add stock and bring to a gentle boil. Reduce heat, stir in heavy cream, and simmer 10–15 minutes.
  5. Blend with an immersion blender for a smooth texture (optional).
  6. Gently fold in crab meat and cook 2–3 minutes until heated through.
  7. Season with salt and pepper. Serve hot with chives or parsley.
