- 8 oz shredded Gruyère cheese
- 8 oz shredded Emmental cheese
- 1 cup dry white wine
- 1 garlic clove, halved
- 1 tbsp fresh lemon juice
- 2 tbsp cornstarch
- Freshly ground black pepper to taste
Instructions
- Rub the inside of the fondue pot or saucepan with the halved garlic clove.
- Toss shredded Gruyère and Emmental cheeses with cornstarch.
- Heat wine and lemon juice over medium heat until gently simmering.
- Add cheese gradually, stirring in a figure-eight motion until smooth and melted; season with black pepper.
- Transfer to a fondue warmer and serve immediately.
Notes
For a non-alcoholic version, replace wine with vegetable broth or apple cider for balanced acidity and smooth melting.
