I named my version of Brazilian seafood stew the weeknight edition because it only includes fish. You can have it on your table in under 30 minutes.

Boil water and rice in a saucepan. Then, lower the heat to medium-low, cover the saucepan, and let the rice simmer until it becomes tender and absorbs all the liquid. This process usually takes around 20 to 25 minutes.

Heat the olive oil in a skillet on medium heat. Put in the onions and 1 teaspoon of salt. Stir and cook until the onions become soft, which should take around 3 or 4 minutes. Then, add the tomato paste, garlic, paprika, cumin, and cayenne pepper. Keep cooking for about 3 minutes. Next, pour in the coconut milk and add soy sauce. Once the mixture starts to bubble, let it simmer for approximately 5 minutes.

Increase heat to medium-high. Stir in bell peppers, jalapeno peppers, and green onions. Let mixture come back to a simmer. Transfer fish to skillet; stir. Cover and cook over medium-high heat until fish starts to flake, about 5 minutes. Remove from heat. Add salt, cilantro, and lime juice; stir carefully to avoid breaking up the fish. Serve with rice.
